DROPLET LIKE

IT’S HOT

You can snag Champagne with afternoon

tea anywhere these days, but only one

place gives you a Ginger R cocktail to

sip with your tea and scones. It’s all part

of the

new afternoon tea

at the Four

Seasons Hotel’s One-Ninety by Javier

de las Muelas, the bar bearing the name

of the Spanish mixologist who recently

revamped the cocktail menu. You’ll get

three tiers of sweets (mango cupcakes,

scones), savouries (lobster and tarragon

salad, organic smoked salmon on

brioche) and TWG tea along with a teapot

cocktail containing Javier’s signature

flavour droplets. Don’t worry – cocktails

are more smooth than strong with

ingredients like passion fruit, mint, white

peach and lychee. $62 per person. 190

Orchard Boulevard.

We may not get delicate spring weather in Singapore, but we

can still celebrate the best ingredients of the season. The spring

menu at St. Regis Singapore’s French restaurant,

Brasserie Les

Saveurs

, features dishes like European white asparagus, grilled

lamb cutlets with spring vegetables, and strawberries flambéed

with fresh black pepper and 100-year-old Grand Marnier (from

$148 for the five-course degustation menu, 6506 6860). And

expect creamy burrata with fresh Italian vegetables (shown

here), nettle risotto and octopus and spicy Calabrian

nduja

with

sweet white corn on the spring menu at Sentosa’s

Il Lido

(from

$98 for the six-course degustation menu, 6866 1977).
