Where are you from?
I was born in Paris, and raised in Montpellier in
southern France.
What dish or ingredients is that region most famous for?
Le gardiane de taureau
, made from the beef of the black fighting bull and
cooked for hours in rich red wine. I remember my father waiting outside
the arena to buy the meat after the bullfighting. It shocks me now to think
about it – a very barbaric tradition indeed!
Who cooks for your household?
In my family, the men are all known for their cooking; women are not
allowed in the kitchen. We have a full-time cook at home, but I love to
cook, and I do prepare organic, healthy recipes for my children.
Where do you shop for food in Singapore?
I buy cheese at Jones the Grocer on Dempsey Hill, and I buy my fresh
organic vegetables from a warehouse in Outram Road called Nature’s
Glory. I go to Eat Organic in Bukit Timah for organic necessities such as
Himalayan pink salt, olive oil, coconut oil, cereals and so on.
And bread?
Cedele at Novena and Paragon have some very nice loaves with cereals,
olives or walnuts. I also like their dairy- and egg-free version, as nearly all
my family have intolerances.
What do you miss most from France?
I missed real French croissants until I discovered Tiong Bahru Bakery.
Now I eat at least one a day – sometimes two! I am addicted.
Your favourite French dish?
When I eat in a restaurant, it’s definitely
bavette
(steak)

(rare) and served with mashed potatoes.

The Berry area of central France.
What is that region most famous for?
Galettes aux pommes de terre

pancakes), and goat’s cheese.
Who cooks in your household?
I am a keen cook, but my Filipina helper
currently does more of the cooking than
I do.

I like Marketplace for general shopping,
and I buy my bread at Fine Life.
What do you miss the most from
France?
Chocolate éclairs

Paul – the salads, soups and quiches are
made using simple ingredients and reflect
the simplicity of the best French food.
